Bibb Lettuce Salad Grilled Feta and Watermelon

Feta is a Greek word that means “slice”. Feta a tangy, salted cheese can be served in salads, pies, with vegetables or meats. This creamy white Greek cheese is traditionally made from sheep’s milk or a mixture of sheep’ and goats’ milk.  When grilled it bursts with flavors from the juice of the watermelon and saltiness of the feta cheese. Bibb Lettuce Salad with Grilled Feta & Watermelon

Ingredients
  

  • 1 pound bibb lettuce or mixed greens
  • 1/2 seedless watermelon sliced into 1/2 inch thick pieces and 6 inch wide
  • 1 pound whole Feta sliced into thick pieces to avoid crumbling
  • 4 Tbsp Secolari Lemon Olive Oil for watermelon
  • 4 Tbsp Secolari Basil Olive Oil for feta
  • 4 Tbsp Secolari Sherry Vinegar

Instructions
 

  • Lightly marinate the watermelon in the Secolari Lemon Olive Oil. Marinate the feta in the Secolari Basil Olive Oil before grilling on both sides.
  • Arrange the bibb lettuce or mixed greens on the plates.
  • On a stove top grill or outdoor grill on low to medium-low heat, grill the watermelon slices, and the feta. Grill just enough to just have light grill marks. Cool slightly and place the watermelon on salad, then the grill feta. Drizzle with Secolari Sherry Vinegar on top and serve.
  • Chef Tip: you can freeze the feta for about 20 minutes before grilling. This will assure that the cheese will not melt on the grill!
