Mediterranean Black Bean Salad
This Mediterranean Black Bean Salad is a fresh and healthy side dish, made with black beans, corn, cucumber, a delicious vinaigrette, and fresh herbs. It’s perfect for potlucks and as a side dish during grilling season. Love this Southwestern black bean salad when the weather is warm, it makes enough to feed a group. It’s a great side dish, appetizer if served with chips, or as a topping for taco salads. You can even serve with grilled meat, fish, and fresh tortillas. With the crumbled feta on top, it’s a full meal.

Mediterranean Black Bean Salad
Ingredients
- 3 (15 oz.) cans black beans drained
- 1 (15 oz.) can corn drained
- 1 English cucumber diced
- 1/2 cup chopped cilantro
- 1/2 cup chopped green onions
- 1-2 juice of lime
- 1/3 cup Secolari Blackberry with Roasted Pepper Vinegar
- 1 to taste Secolari Roasted Garlic Sea Salt
- 1 to taste black pepper
- 1 to taste ground cumin
- 2-3 tbsps Secolari Blood
- 1 1/2 cups crumbled feta
Instructions
- Combine the black beans, corn, cucumber, cilantro, and green onion in a large bowl; mix well. You may wish to add more lime to taste.
- Add the lime juice, Blackberry Roasted Pepper Vinegar in a small bowl. Season with salt, pepper and cumin. Mix well. Drizzle the olive oil to emulsify the dressing. Taste adjust with seasoning, lime juice, or vinegar. and feta i
